Roast Turkey
Roast turkey recipe from the Thanksgiving show on BITV
Dry Rub
1 cup kosher salt
¼ cup Sea salt
2 Tablespoons Paprika
¼ cup Dry thyme
¼ cup Dry rubbed sage
2 Tablespoons Black pepper
1 Tablespoon Celery seed
½ teaspoon Cayenne
1 teaspoon White pepper
1 teaspoon Old Bay seasoning
This makes quite a bit, but it’s nice to have on hand pre-mixed.
Store this mix in a tightly sealed jar.
Rub your washed & dried turkey down with Olive oil.
Season the inside w/ some of the dry rub mix.
Stuff the bird w/
1onion chopped
3 cloves smashed garlic
3 bay leaves (1 if dry)
1 bunch fresh sage leaves
1 bunch fresh rosemary
Season the outside of the turkey, rub it in really well and then hit it again w/ more seasoning.
Pre-heat oven to 425º
Roast 35 min @ 425º
Drop the oven temp to 325º
Tent with oiled foil
Roast @ 325º for 2- hours.
Check temperature.
Roast until 165º
Rest at least 20 minutes before carving.
